Easy royal icing that tastes great and dries hard. Perfect for sugar cookies!

  • 4 cups powdered sugar, sifted
  • 3 tablespoons meringue powder
  • 7 tablespoons water
  1. Sift powdered sugar into the bowl of your stand mixer.
  2. Add meringue powder.
  3. Whisk by hand powdered sugar and meringue powder together to incorporate.
  4. Add water.
  5. Using the whisk attachment for your stand mixer, slowly mix the icing on low speed until the powdered sugar is no longer dry.
  6. Increasing the mixing speed to medium (approximately number 6 on a Kitchen Aid mixer) and let the icing mix for 4 minutes.
  7. Stop the mixer and scrape down the sides and bottom of the mixing bowl where they may be dry powdered sugar.
  8. Continue to mix on medium speed for 5 more minutes.
  9. The icing should form lines in the mixing bowl and peaks on the whisk attachment.
  10. Transfer the icing to an airtight container. Store in the refrigerator until ready to use.

Makes 3 cups of icing
