  • 3 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (200g)
  • 1 1/2 cup light brown sugar, packed (226g)
  • 1 stick of butter, softened to room temperature (113g)
  • 1 teaspoon light corn syrup
  • 2 teaspoons baking soda
  • 1 1/2 cup creamy peanut butter (340g)
  • 4 1/2 cups quick oatmeal (450g or 1 16oz container)
  • 3/4 cup Reese’s peanut butter chips (113g)
  • 2/3 cup Reese’s Pieces mini candy (130g)
  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together eggs, vanilla, sugars, and butter.
  3. Add corn syrup, baking soda, and peanut butter. Mix to combine.
  4. Add oatmeal, peanut butter chips, and Reese’s Pieces. Mix well until all ingredients are incorporated and evenly distributed.
  5. Scoop large teaspoons of dough onto a cookie sheet (2 inches apart).
  6. Flatten the dough balls slightly using the back of a spoon or your fingertips.
  7. Bake cookies for 12 minutes. Do not overbake. Cookies will be chewy.
  8. Leave cookies on the cookie sheet for ~3 minutes before transferring them to a cooling rack.

Makes 5 dozen cookies
