  • 3 cups all purpose flour, sifted
  • 10 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 pound unsalted butter, room temperature
  • 3 cups sugar (620g)
  • 1/4 teaspoon salt
  1. Preheat oven to 350°F.  Grease two loaf pans with nonstick spray. Set aside.
  2. Whisk together eggs, vanilla extract, and almond extract. Set aside. 
  3. Beat butter in a mixing bowl for ~2 minutes. 
  4. Gradually add in sugar and salt. Beat butter and sugar mixture for 3-5 minutes until light and fluffy. 
  5. Dribble in egg mixture, about 1 tablespoon at a time, mixing in between. Scrape down the sides of the bowl periodically.  
  6. Add ~1 cup of flour at a time to the batter and mix until just combined. 
  7. Pour or spoon batter equally into two loaf pans.  
  8. Bake for 1 hour to 1 hour 15 minutes until a toothpick inserted into the center of the cake comes out clean.  
  9. Let cakes cool in the pan for 10 minutes. Remove from pan and place onto a cooling rack to cool completely.  

Makes two loaves of cake; approximately 20 slices
